11/20/06 - So this weekend I started doing research for the family tree. I plan to go back at least 3 generations on each side, if it's possible. I have a family genogram that is due for my communications class next week, so that will be my practice time.

so far, I have found out that my great grandparents on my grandfather's side were from Sweden [I can't remember their cities] and that there were many kids on his side...so it will be a big job. I'm up for it. I'm going to try and tackle it this winter break if I have time.

#1. Apple Jello Thingies.

Ingredients:

* Apples
* Jell-O, straight out of the box, still powdered

Method:

* Preheat oven to 250*F.
* I think this was originally supposed to be with just the apple peels, but I cut 'em into skinny wedges.
* Put Jell-O powder in a gallon-size Ziploc.
* Shake apple pieces/peels/whatever and Jell-O and/or moosh them around until all the apples are coated.
* Bake for 30-45 minutes on a cookie sheet lined with parchment paper. Do not skip the parchment paper, or you'll end up with a ginormous sticky mess.
* Eat.

#2. Puppy Chow / Muddie Buddies

Ingredients:
9 cups Chex® cereal (any variety)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Preparation Directions:
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, stir together chocolate chips, peanut butter and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
Stove-Top Directions: Into large bowl, measure cereal; set aside. In 1-quart saucepan, heat chocolate chips, peanut butter and butter over low heat, stirring frequently, until melted. Remove from heat; stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag. Add powdered sugar. #3. Bailey's Irish Cream Bars/Cake

For Cake:
1 Pkg yellow cake mix -- Moist Deluxe
3 eggs
2/3 Cup Bailey's Irish Cream
1/3 Cup oil

For Swirl:
1 Can cream cheese frosting
= Vanilla Creamy
1 Pkg white chocolate chips
1/4 Cup Bailey's Irish Cream

Preheat oven to 350. Prepare a jelly roll pan (about 15" x 10" x1"). Mix cake mix with eggs, Irish Cream and oil. Set aside 1/2 cup of prepared cake batter for swirl. Pour cake batter into prepared pan. In a small bowl, blend all swirl ingredients. Drop large spoonfuls of this mixture over the cake batter. Swirl with a fork to make a marble effect. Bake 25 - 30 minutes. Cool and cut into squares [from bakebakebake Community]

#4. Easy Enchiladas From LJ Community bakebakebake

Ingred:
1 largish jar of Salsa
1 bag of Monterrey Jack/Mix Cheese (2 cups)
8-10 tortillas
1 can of black beans
1 roma tomato (if you'd like) diced
either 3 breasts of chicken that you cook up before hand and pull OR do as I do and get a rotisserie chicken and use half of it (about 2 cups) shredded/pulled.

Set oven to 350.
In an oven safe pan, i used my calphon chili pot as my lasagna pan went missing, pour just enough salsa to just cover the bottom of the pan.
In each tortilla add a sprinkle of cheese, beans, and chicken.
Roll and place them SEAM side down in the pan.
Once they are all in the pan, cover with the rest of the salsa, rest of the beans if any are left over, and cheese. add diced tomato sprinkled on top
Put in oven for 30ish minutes until bubbley!

Sour Cream also is a nice topper!

#5. Cuba Libre Cupcakes

Ingredients:
1 cup flour
1 cup sugar
1/2 cup coca cola
1/2 cup butter
1/4 cup milk
3 tablespoons dutch processed cocoa
2 tablespoons rum
1 tablespoon lime juice
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 egg

Directions:
Preheat oven to 350. Line or grease and flour 1 12 cupcake cupcake pan. In a small saucepan, heat butter, coca cola and rum to boiling. Remove from heat and allow to cool. Mix together lime juice and milk in a small bowl* or measuring cup and set aside. Meanwhile, whisk together cocoa, flour, sugar, baking soda, baking powder and salt. Add the cooled butter/coke mixture and beat until well combined. Add egg, beat then pour in the milk. Mix until combined. The batter will be rather thin. Fill each well 2/3 of the way full. Bake 20 minutes or until a toothpick comes out clean. Remove cupcakes to wire racks as soon as possible to cool. Frost with Chocolate Rum Cream Cheese Frosting when cool. Garnish with a wedge of lime.
*This will sour the milk a bit. Do not worry if it looks slightly curdled.

1 Cup butter
3/4 Cup packed brown sugar
1 Cup sugar
1 (3.4 oz) package instant chocolate pudding mix
2 eggs
1 teaspoon vanilla extract
2 1/4 Cup all-purpose flour
1 teaspoon baking soda
1 package green mint chocolate chips

1. Cream butter, sugar, and pudding mix. Add eggs, vanilla. Then add flour and baking soda. Mix in chocolate chips.
2. Bake @ 350F for 9-11 minutes.

-Staying angry with you is how I protect myself from you. #1. September 2006 [can't remember exact date] Kim gave me a Vietnamese food with pork and egg in it. I took the egg out..but it was pretty ok. Not really a fan of pork though. I will find out the name soon. <--EDIT: Banh Boa [I think that's what it's called.]

When I was shopping with my mum at a thrift store in Columbia Heights, and found a Louis Vuitton purse. No, I don't think it's not a knock off...there's even a serial number on the inside of the purse. Of course, it's the signature Louis Vuitton in brown, so I'm saying that this is going to be my brown item. I know, you may consider it cheating. oh well.

Jen & Chris' wedding...

It was a great time...unfortunately I happened to forget my camera. There are a few people who took pictures of me, and if they could get them to me so I could post them, you guys would be great!

I sat with Kim, her date, Chantel, Brett and Rob. The wedding was very laid back, and it was a great wedding. After some difficulty finding the reception hall, and some people getting angry, we arrived one hour late. No biggie. Hung out with Rob, Robert and Sarah, as well as Kim, her date and Chantel and Brett. We danced to the Macarena, and various other typical wedding songs. I had a blast.
